4
4 thin chicken pieces (1/4 lb. each)
1/4 tsp. fine grain sea salt
8 fresh sage leaves
1 T. olive oil
8 strips smoked bacon
1/2 c. fat-free, reduced-sodium chicken broth
1/4 c. fresh lemon juice
1 clove garlic, minced
1 T. heavy cream or half-and-half
1 tsp. cornstarch
1 T. butter
salt and pepper to taste
1. Sprinkle the chicken evenly with salt. 2. Place 2 sage leaves on each cutlet; wrap 2 strips bacon crisscrossed around each piece of chicken to secure sage leaves. 3. Heat a large skillet over medium heat. Add 1 tablespoon oil to pan, swirling to coat. 4. Add chicken to pan; cook for about 5 minutes on each side or until done. 5. Remove chicken from pan; keep warm. Drain grease from pan. 6. Combine broth, lemon juice, garlic, cream, and cornstarch in a small bowl; stir with a whisk until smooth. 7. Add cornstarch mixture and the butter to pan; bring to a boil, stirring constantly. 8. Cook mixture for 3-4 minutes, or until slightly thickened, whisking constantly. 9. Serve chicken over pasta, and spoon sauce over chicken.
