Sometimes eating healthy can feel a little repetitive! Here’s a new healthy side dish to mix it up a little bit. Probably one of the easiest recipes I have ever made, and probably not healthy since I ate enough for a whole family. Nothing beats a delicious AND healthy side to some of these great meals we’ve been sharing this month!

2 Tomatoes
½ cup Parmesan Cheese
1 teaspoon fresh Oregano (chopped)
1 Tablespoon Extra Virgin Olive Oil
salt and pepper for seasoning

Preheat oven to 425.
Wash tomatoes and slice in half horizontally. If that is too thick for your liking, you can cut out some tomato in the center to make the ends thinner.
