Rice formed into a ball, stuffed with cheese, breaded and baked for a delicious side dish or even snack.

2 cups cooked and cooled arborio rice
1/2 cup grated Parmesan cheese
2 eggs
4 ounces mozzarella, cut into 8 small cubes
1 cup Italian bread crumbs
For Serving

Line a baking sheet with parchment paper or a slipmat.
