Baked Sweet Potato Fries with Chipotle Mayo

We LOVE baked sweet potato fries in our house and these are so easy to make. Whether with a meal or for a snack, these go great with chipotle mayo. This night we had them with Greek lamb sliders!

For sweet potato fries:
½ t ground cumin
½ t salt
½ t ground red pepper (adjust for preferred heat)
2 T olive oil (or vegetable oil of your choice)
3 medium sweet potatoes
For the Chipotle Mayonnaise
2 c mayonnaise
4 chipotles in adobo sauce
2 T adobo sauce
Juice of 1 lime
Salt and pepper to taste
½ t ground cumin

Preheat oven at 400?
Peel the potatoes and cut in half, then cut each half into roughly 6 pieces
