1/2 pound sweet potato, peeled and cut into 1/4 - 1/2 inch slices
1/2 pound baby carrots, halved lengthwise
1 bunch asparagus, trimmed
1 pint cherry tomatoes
1 red, orange, and yellow pepper, chopped
Balsamic Dressing
2 tablespoons olive oil
4 tablespoons balsamic vinegar
1/4 teaspoon garlic powder
1 1/2 teaspoon dried oregano
3/4 teaspoon dried thyme
salt and pepper
pinch of cayenne powder
1/2 pound sweet potato, peeled and cut into 1/4 - 1/2 inch slices
