Here’s a great alternative to ice cream, using the summer’s yummiest fruits, BERRIES! I literally stumbled upon this recipe in the June/July 2013 issue of FamilyFun magazine and knew it would be a crowd-pleaser at my house. We devour berries of all kinds all season long, so finding new and interesting ways to use them is always a challenge. 3 c. fresh berries (I used half strawberries, half blueberries)
1 small ripe banana, broken into pieces
1/2 c. unsweetened fruit juice (I used 1/4 c. freshly squeezed lime and 1/4 c. apple)
1/3 c. lemon juice
1/3 c. light corn syrup
1–2 tbsp. sugar (or to your liking)
1/4 tsp. cinnamon
pinch of salt
