Very good banana bread recipe. I found that if I skip the bananas and make a variation of it you get an awesome cake with fresh fruit of your own liking. I have made it with strawberries, but I imagine any fresh fruit would come out awesome.

2 c flour
1 1/2 c sugar
1 1/2 t b powder
3/4 t b soda
1 c mashed bananas(2-3)
1/2 c buttermilk or sour milk
1/2 c shortening
2 eggs
1 t vanilla
1/4 t salt

Heat oven to 350. Combine flour, sugar, baking powder and baking soda. Add banana, milk, shortening, eggs, vanilla and salt. Beat on low until combined. Beat on medium for three minutes. Pour into 2 greased floured 8x 1 1/2 pan, or 9 x 13 pan. Bake 30-35 minutes or until done. Cool on rack 10 minutes. Remove from pan. Cool on rack. ** To make this with strawberries, omit the bananas . Leave out fruit till end and gently fold the fruit in. it ends up being a yellow cake with fruit in it. You can add nuts if you like.
