Banana Cream Pie is for serious banana lovers! This pie is chocked full of bananas and been reduced in fat; heck it's practically a health food!

FOR THE BANANA CREAM PIE

1 can Coconut milk, a can is 13.5 ounces
2 cups Milk, whole or 2%
1 ¼ cups Granulated sugar, divided use
1 Vanilla bean (or 2 tsp. vanilla extract)
3 Egg yolks (keep 1 of the egg whites to use in the crust)
2 Whole eggs
½ cup Corn starch
1 Nilla Wafer pie shell, recipe follows
6 Bananas, sliced between 1/8 and ¼ inch thick

FOR THE NILLA WAFER PIE SHELL

60 Nilla Wafer cookies
¼ tsp. Cinnamon
¼ tsp. Salt
3 Tbsp. Melted butter
1 Egg white
