BASIC CURRY SPICE
Curry is a comfort food for me and one of the most fragrant and satisfying meals you can make. This is just a basic curry spice recipe which will give you a good jumping off point. You can feel free to adjust, add or substitute anything you like. Add heat, sweet or whatever else you can think of.

2 tbsp whole cumin
2 tbsp whole coriander
2 tbsp whole mustard seeds
2 tbsp whole fenugreek
2 tbsp turmeric
2 tbsp paprika
salt and pepper to taste

-toast the whole spices in a dry pan on high heat until just starting to smoke
-bash around in a pestle and mortar or use a coffee grinder if you have one
