1 scallion (chopped)
12oz medium shrimp (peeled and deveined)
4 tablespoons fresh basil (slivered)
1 cup cherry tomatoes (halved)
2 cups fresh spinach
balsamic vinegar (for drizzling)

In a medium skillet, heat the olive oil. Add shrimp, onion, tomato and basil. Cook until shrimp is pink
Layer the shrimp mix on top of the spinach and drizzle with balsamic. Serve.
