Basil Shrimp and Tomatoes over Spinach

Fresh and light summer dish that is easy to prepare and bursting with fresh flavor.

2 tablespoons olive oil
1 scallion (chopped)
12oz medium shrimp (peeled and deveined)
4 tablespoons fresh basil (slivered)
1 cup cherry tomatoes (halved)
2 cups fresh spinach
balsamic vinegar (for drizzling)
In a medium skillet, heat the olive oil. Add shrimp, onion, tomato and basil. Cook until shrimp is pink Layer the shrimp mix on top of the spinach and drizzle with balsamic. Serve.
