Beef Bone Broth Recipe

3-4 pounds of mixed beef bones (oxtail, knuckles, short rib, etc.)
1 tablespoons olive oil
2 medium onions, chopped
2 medium carrots, chopped
3 celery stalks, chopped
1 bay leaf
