Berry Oatmeal Cookie Stacks

Crispy oatmeal cookies layered with pastry cream and fresh berries for an easy but elegant dessert.

For the cookies

2 1/2 tablespoons butter, melted
1/4 cup packed brown sugar
1 tablespoon granulated sugar
2 tablespoons corn syrup
1 cup old-fashioned rolled oats (not quick cooking)
1/4 cup pecans, finely chopped
For the berries and cream filling

1 cup heavy cream
2 tablespoons sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 (3.4 oz.) package instant vanilla pudding
1 1/2 cups milk
3-4 cups fresh berries

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
