Black Bean Fajita Bowls with Avocado Sauce

A healthy yet so incredibly flavorful fajita bowl with lots of great spices like chili powder and smoked paprika with a tangy avocado sauce

1 cup uncooked quinoa (rinsed if required)
2 cups vegetable broth (or water)
1 tablespoon butter
1 clove garlic, minced
1 medium yellow onion (1/4 cup will be chopped, remainder will be sliced)
1 red bell pepper, seeds removed
1 green bell pepper, seeds removed
14 oz package extra firm tofu, pressed and drained*
4.5 tablespoons (1/4 cup + 1 TB) olive oil, divided
1 tablespoon chili powder
2 teaspoons smoked paprika
1/4 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon + 1/4 teaspoon salt + more for seasoning
1 can black beans, drained and rinsed
1 ripe avocado
Juice of 1/2 lime
2 tablespoons cilantro
Pepper, for seasoning
