Black Bean Sweet Potato Tacos

Delicious and healthy vegetarian tacos.

1 sweet potato (peeled and cubed into 1/2 cubes [as best you can])
1 15 oz can black beans (drained)
8 corn tortillas
grated Colby jack cheese (depends on how much you want to eat)
fresh cilantro (torn into bite sizes)
salt and pepper to taste
1 Tbs butter
1/4 cup diced red onion
lime (cut into wedges)
sriracha sauce or hot sauce
Put your cubed sweet potato into a microwave proof bowl, cover, and cook for about 3 to 5 minutes until fork tender. Sprinkle with salt and pepper and add butter, stir gently to melt. Warm corn tortillas...
