Blackberry and Apple Galette

Juicy blackberries and tender apples are encased in a rich, buttery pastry to create this truly amazing Blackberry and Apple Galette.

For the pastry:

2 cups (280g) all purpose flour
3tbsp white sugar
1/4tsp salt
1 and ½ sticks (170g) cold unsalted butter, cut into 1 inch cubes.
3-4tbsp ice cold water (It always ends up being 4tbsp for me)
For the filling:

2 medium/3 small tart apples, such as Bramley or Granny Smith, peeled, cored and sliced thinly
2tbsp cornstarch
1/2tsp ground cinnamon
3tbsp light brown sugar
1/2tsp vanilla extract
2tbsp water
1 and ½ cups (188g) blackberries
Water and granulated sugar to sprinkle on top of the galette, optional
Make the pastry first: Place flour, sugar, salt and butter into your food processor and pulse until you have a coarse breadcrumb texture and there are no huge lumps of butter. Add the water, 1tbsp at a time...
