Bolo De Coco - Brazilian Coconut Cake

A lightly sweetened cake soaked in a mixture of sweetened condensed milk and coconut milk.

3 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 eggs - separated into 3 whites and 3 yolks
1 1/2 cups sugar
1 cup orange juice
1 teaspoon vanilla extract
1/2 teaspoon almond extract

1 cup (about 1/2 can) coconut milk or coconut cream
1 (14 oz) can sweetened condensed milk
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract

2 cups shredded coconut

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
