When breakfast for dinner is in order, these Brown Sugar Oatmeal Pancakes are just the thing! We like them for breakfast as well. These make a super simple supper, and a little more elaborate morning meal, but either way they are well worth it!
1/2 cup quick-cooking oats
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. packed brown sugar
1 Tbsp. honey
1 egg
2 Tbsp. vegetable oil
1 cup buttermilk

In a small bowl, combine the oats, flours, baking soda, salt and sugar. In another small bowl, beat the egg, oil, buttermilk, and honey. Stir into dry ingredients just until moistened.
