Buttermilk Chocolate Chip Zucchini Bread

Yummy zucchini bread with chocolate chips. The buttermilk makes it extra moist.

1/3 cup soft butter or margarine
1 cup sugar
2 eggs
1 tsp vanilla
1/3 cup buttermilk
1 1/2 cups shredded zucchini
1 2/3 cups flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1 tsp cinnamon
1/2 cup mini chocolate chips
Cream butter and sugar. Beat in eggs, vanilla, buttermilk, and zucchini. Combine dry ingredients and chocolate chips, stir in. Pour into well greased 9×5" loaf pan, or 3 mini pans. Bake at 325. Large loaf...

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
