Butternut Squash Tomato Basil Bisque

The perfect soup for a cozy winter night. We put a little goat cheese in our soup before we eat it and the tangyness of the goat cheese is the perfect contras with the smooth, creaminess of the soup. Add some toasted bread for dipping and a nice salad and you have dinner!

14 oz. can of diced tomatoes
18 oz. box of V8 Butternut Squash Soup (or any other brand)
1 1/2 teaspoons chopped garlic
1 tablespoon of butter
1/3 cup chopped onions
1 cup low sodium chicken broth
1/2 cup half and half
1 tablespoon sugar
1 teaspoon dried basil (I used fresh basil from our plant for garnish too)
salt and pepper to taste
2 oz of goat cheese
1.) In a small saucepan, melt butter and saute onions and garlic until onions start to get translucent. 2.) Pour onion mixture into a blender and add in the butternut squash soup and the can of tomatoes....
