A soft, rich chocolate and peppermint cupcake is topped with smooth, peppermint frosting and finished off with crushed candy canes, creating a fun, festive cupcake!

For the cupakes:
1 stick unsalted butter/margarine, at room temperature
1 cup caster sugar
2 large eggs
1/2tsp vanilla extract
1/2tsp peppermint extract
1 cup plain flour
1/2 cup cocoa powder, sifted
2tsp baking powder
Pinch of salt, ONLY if using unsalted butter
1/2 cup milk
1 cup dark chocolate chips
For the frosting:
2 sticks unsalted butter, at room temperature
2 and 1/2 cups icing sugar, sifted
3/4tsp peppermint extract
Pinch of salt
1-3tbsp milk
