Feeling a little sad that summer was over, I decided to make myself a treat to get myself ready for fall. Apples always remind me of the start of fall, so I decided to find an apple treat to make. I saw this recipe from Betty Crocker and decided to give these a try. The family absolutely loved these and they even cheered me up from my end of summer blues!

1/2 cup cold butter
1 pkg. (1 lb. 1.5oz) Betty Crocker oatmeal cookie mix
1 egg
1 cup finely chopped peeled apples (granny smith apples work great)
3/4 cup caramel topping
1/4 cup flour
1 pkg. (1 lb. 1.5oz) Betty Crocker oatmeal cookie mix

Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.
Cut the butter into the cookie mix with a pastry cutter. Add the egg and mix till crumbly.
