A spin on the classic apple pie with gooey caramel, cinnamon apples, and crunchy pecans.

For the crust:
1 1/4 cups all-purpose flour
1/2 tsp salt
2 Tbs granulated sugar
1/3 cup unsalted butter, melted
3-4 Tbs ice water
For the caramel sauce:
1 cup packed light brown sugar
6 Tbs unsalted butter
1/3 cup evaporated milk
1 tsp vanilla extract
For the filling:
7 cups tart baking apples, peeled, cored, and sliced thin (about 4 medium apples)
1 tsp lemon juice
3/4 cup chopped pecans
1/2 cup packed light brown sugar
3 tsp ground cinnamon
1 Tbs cornstarch
1/4 cup caramel sauce

3/4 cup all-purpose flour
