Caramel PopCorn with Chocolate

This caramel corn is super easy and extremely addicting. If you haven't ever tried homemade caramel corn you will be shocked at how much better it is than store bought. Here it goes, make with caution as every time I make it, I eat so much I gain 3 pounds, but so worth it!

12 cups of popped popcorn (1/2 cup of kernels)
1 stick plus 2 tablespoons of butter
1/3 cup of light corn syrup
1 1/4 cups packed light brown sugar
1/4 teaspoon baking soda
1 teaspoon of vanilla
8 ounces of dark or semi-sweet chocolate
1/4 cup of Canola oil
Pam or spray oil
