Carrot and Apple Oat Muffins

The combination of apple and carrot makes these muffins, sweet, yet slightly tart. Along with oats and a little spice in there too, they're hearty and filling, whilst not being packed with sugar.

2 cups plain flour
1 cup rolled oats
2 and 1/2tsp baking powder
1/2tsp baking soda
1/2tsp ground cinnamon
1/2tsp ground ginger
3/4 cup light brown sugar
1 cup grated apple (this was one large Granny Smith for me)
1 cup grated carrot (2-3 medium carrots)
2 large eggs
1/2tsp vanilla extract
1/2 cup milk
1/2 cup vegetable oil

Preheat oven to 350F and grease a 12 hole muffin tin.
