delicious homemade granola that tastes like carrot cake

2 cups of rolled oats
1 cup of unsweetened shredded coconut
1/2 cup finely grated carrots
1/4 cup of coconut oil
1/4 cup of maple syrup
1/2 cup of brown sugar
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp ginger
1/4 tsp nutmeg
