delicious homemade granola that tastes like carrot cake

2 cups of rolled oats
1 cup of unsweetened shredded coconut
1/2 cup finely grated carrots
1/4 cup of coconut oil
1/4 cup of maple syrup
1/2 cup of brown sugar
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp ginger
1/4 tsp nutmeg
1 cup of unsweetened shredded coconut
1/2 cup finely grated carrots
1/4 cup of coconut oil
1/4 cup of maple syrup
1/2 cup of brown sugar
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp ginger
1/4 tsp nutmeg
combine the oats, coconut, and carrots and set aside
in a small saucepan combine the oil, syrup, and brown sugar
bring to a boil over med. heat
once melted, stir in the vanilla and spices
