Carrot Cake Rice Krispies with Cream Cheese Frosting

These are the same crispy, chewy, tasty Rice Krispie treats we know and love but they are jazzed up a bit with some spice and a cream cheese frosting! You can do this same method with confetti cake mix or a spice cake mix and it will work, too. Enjoy!

1/4 cup butter
1 bag (about 6 cups) mini marshmallows
1 tsp vanilla
3/4 cup carrot cake mix
6 cups Rice Krispies

FROSTING:
1 8 oz brick cream cheese, softened
1 tsp vanilla
4 cups icing/powdered sugar
Generously spray a 9 X 13 pan with cooking spray. Set aside. In a large pan, melt butter, marshmallows, and vanilla over low heat. Stirring until smooth. Remove from heat and stir in carrot cake mix and Rice Krispies until well combined. Scrape mixture into prepared pan. Spray your hands with cooking spray and then quickly press mixture out evenly into pan. (Or you can rub a bit of butter on your hands.) Be careful as it is warm! Let mixture cool. In a bowl, beat cream cheese and vanilla until smooth. Slowly beat in icing sugar until spreadable consistency. Frost Rice Krispies in pan. Cut and serve.
