Individual cheesecakes with cherry topping

For Cheese Tarts:
3 8 oz. packages of cream cheese
5 eggs
1 cup sugar
1 tsp. lemon juice
1 tsp. vanilla

For topping:
8oz. sour cream
1/2 cup sugar
can of cherries
Preheat oven to 325 degrees. Place foil baking cups into 2 regular size muffin pans(makes 24 tarts). Cream the sugar and cream cheese together with your stand mixer or hand mixer. Add eggs one at a time and mix until incorporated. Scrape sides of bowl as necessary. Now add the lemon juice and vanilla and mix together. Fill the muffin pans about 2/3 of the way full. Bake in oven for 25 minutes.
