Cheesecake Factory Tex Mex Eggrolls (Copycat)

I'm sure many of you have tried Cheesecake Factory's Tex Mex Eggrolls know what I mean when I say these are DE-LIC-IOUS! The ingredients in their egg rolls are really simple, so I knew I had to make them at home, and boy were they good! Serve them with our super easy Creamy Cilantro Dipping Sauce and you'll be in heaven!

For the Egg Rolls:
1 package Egg Roll Wrappers
1 (15 oz) can Black Beans, drained and rinsed
1 cup corn
1 green bell pepper, diced
2 medium tomatoes, diced
1 small onion, diced
3 chicken Breasts, cooked and shredded
1/2 tsp cumin
1 tsp garlic powder
1 tsp chili powder
1/2 cup shredded cheese (optional)
2-3 Tbsp Oil for light frying*

For the Dipping Sauce
6 oz. cream cheese
1/4 cup sour cream
1 large bunch cilantro
2 Tbs salsa (optional- I use it to thin the sauce if necessary)
