Cheesy American Chop Suey Casserole Copycat

A slightly spicy and very delicious casserole that will feed a lot of people.

32 ounces elbow noodles
1 1/2 tablespoons cajun or creole seasoning
1/2 tablespoon black pepper
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
2 teaspoon paprika
1 teaspoon dried oregano
1 tablespoon olive oil
1 yellow onion, diced
1 bell pepper, diced
1 stalk celery, diced
3 cloves garlic, minced
1 1/2 pounds ground turkey
6 ounces no salt added tomato paste
2- 28 ounce can whole tomatoes
15 ounces no salt added tomato sauce
1 tablespoon hot sauce
2 tablespoons dried parsley
2 cups shredded sharp cheddar cheese
1 1/2 tablespoons cajun or creole seasoning
