Cheesy Macaroni Casserole

My kids love Mac and Cheese but I don’t exactly love it. With This Cheesy Macaroni Casserole, everyone is happy. My husband calls it, loaded Mac and Cheese! This is the perfect meal to hide some vegetables in!

1 lb lean ground turkey
1 Tablespoon of olive oil
1 cup chopped onion
1 medium red pepper, chopped
1 cup of diced mushrooms
1 (14.5 oz) can of petite diced tomatoes, drained
2 cups marinara sauce
salt and pepper to taste
2 cups of shredded mozzarella cheese
10 oz of Elbow Macaroni (I used whole wheat), cook it according to the directions on the box
