This cheesy salsa chicken and rice is the perfect weeknight dinner. I think my son ate three plates full! Anytime I make rice we always top it with cheese and salsa! This time I mixed it all in together, and the outcome was absolutely delicious! I used Chi-chi’s salsa with cilantro. I love Chi-chi’s salsa, but this was my first time trying it with cilantro and I loved it. But I am a big time cilantro fan already! Chicken, 2 breasts (boneless and skinless)
Taco seasoning, 2 tbsp
Brown rice, 2 cups uncooked (minute rice)
Salsa, 3/4 cups
Cheese sauce, 14.5 oz jar
