Chicken Barley Soup

This first soup I am sharing is a simple soup bursting with great color,texture, and flavors that just shout home cooked! I love the hearty texture and earthy flavors joined with fresh veggies,barley,potatoes and lots of chicken! Hats off to one souper recipe! I pair this soup alongside warm,soft Italian Herb bread!

1 cup of diced carrots
1 cup of diced celery
1 cup of diced onion
2 chopped green onion or 1 chopped shallot
2 cloves of minced garlic
1 tablespoon canola oil
2 quarts (8 cups) of chicken stock or broth
1/2 cup barley
3 diced potatoes
3 cups of chicken(or turkey) Cooked
Spices to season...I use whatever I have on hand which is usually thyme, Italian spices,fresh ground pepper,bay leaf, fresh ground pepper,salt to taste.
3 tablespoons of butter
3 tablespoons of flour
