Chicken biryani in oven

Chicken biryani is very popular in India.It is made by seasoning all the rich spices with chicken and rice to give a flavor and spicy taste. Today I am preparing my mom style of chicken biryani ,but a little variation is that I am using oven method to cook .you can even cook using pot or pressure cooker.

Whole chicken chopped into medium size pieces
2 cup 70% cooked basmati rice
4 Onions sliced
3 Tomatoes chopped
1 tsp Ginger paste
1 tsp Garlic paste
1 ½ tsp Red chili powder
½ tsp Coriander powder
¼ tspTurmeric powder
¼ tsp Gram masala powder
1 tsp Lemon
2 tbsp Curd
2 tbsp coriander leaves chopped
2 tbsp Mint leaves chopped
1 tsp Salt or as per taste
5 tbsp Fried onions
2 green chillies sliced
10 Cashew
1 inch Cinnamon
2Bay leaf
½ tsp shahi jeera(caraway seeds)
1 star
6 clove
4 tbsp oil

½ tsp fennel seeds

*Marinate the chicken with ½ tsp salt,1 tsp red chili powder,1/2 tsp coriander powder and 1 tsp ginger garlic paste for 30 min or 4 hrs for best result. * Prepare biryani masala by grinding the ingredients under biryani masala to fine powder. *To 5 cups of water ,add 1 tsp salt ,1 tsp oil and 2 cups of rice and cook the basmati rice about 70%,drain the rice and set aside for layering. *In a skillet,add 3 tbsp of oil,when hot add bay leaves,cloves,cinnamon,jeera,Cardamon and allow it to crackle. *Now add ginger,garlic paste ,sauté for 1 min until the raw smell disappears,followed by add onion and sauté until the onions turn translucent . *Then add marinated chicken ,turmeric powder ,salt and sauté with onion for 2 min,followed by add tomatoes ,green chili,mint leaves,coriander leaves and dry masala powder mentioned in ingredients ( biryani powder,red chili,salt,coriander,garam masala powder ) one by one and combine well with chicken and cook for 6 min. *After 6 min add curd and lime juice and mix well with chicken masala and cook for 1 min and set it aside of layering. * once the rice and chicken are cooked the next step is layering of biryani . * keep these ingredients ( fried onion,cashew,chopped coriander and mint leaves)ready before you start layering the biryani . *layering of biryani- In a wide glass tray/ aluminum tray start the layering by adding on layer of cooked chicken masala followed by layer of cooked rice,then a layer of chopped leaves and fried onions. * Repeat the step of layering the rice and chicken masala in the same manner,lastly sprinkle the leftover fried onions and cashews and seal the tray with aluminum foil. * Seal the tray well so that the steam does not escape. * Cook in oven at 365 F for 30 min. * After 30 min,open the foil and gently mix the layer of biryani from the bottom and transfer to the serving plate. *Enjoy the aromatic and spicy chicken biryani with cold raitha
