Chicken & Broccoli Quesadilla

A simple, delicious quesadilla made with chicken nuggets.

1 medium (taco) flour tortilla
4-5 chicken nuggets
1 cup frozen broccoli florets
2 slices cheddar cheese
2 tbsp chopped scallions
Salsa, to serve
Heat up the chicken nuggets in the microwave until warm. Cut up into bite-sized pieces. Next, thaw and warm up the broccoli in the microwave and cut them up too. Heat up the pan and add the tortilla. Break up the cheese slices and layer them on the tortilla evenly so it covers the whole thing. Add on the chicken nuggets and broccoli. Sprinkle with scallions and cook the one side until the cheese melts and it’s toasted. Do not fold it in half yet! It’s a lot of filling and might fall out. You want the cheese to melt first so the chicken and broccoli stick. After the cheese is melted fold the whole thing in half. Serve with salsa.
