Chicken Chinese Salad

A delicious large and filling salad.

2 boneless skinless chicken breasts
3 tablespoons low sodium soy sauce
2 tablespoons rice wine vinegar
2 tablespoons olive oil
1 head romaine lettuce, chopped
4 cups chopped red cabbage
1- 8 ounce bag frozen edamame, thawed and drained
2/3 cup shredded carrots
1/2 cup chow mein noodles
1/4 cup sliced almonds, toasted

Dressing
1/4 cup olive oil
3 tablespoons honey
2 tablespoons rice wine vinegar
1 teaspoon ground ginger
1 tablespoon low sodium soy sauce
1 clove garlic, minced
2 teaspoons sriracha chile sauce
1 teaspoon sesame oil
