Chicken Fajita Stuffed Peppers

These beautiful peppers are stuff with a fabulous combination of rice, veggies and black beans. They are seasoned perfectly to bring a fiesta to your table tonight!

2 cups cooked brown rice
6 medium bell peppers, any color
1 medium yellow onion, chopped
2 cloves minced garlic
2 Tbsp olive oil, divided
1 lb chicken, diced
1 tsp chili powder
1 tsp ground cumin
1/4 tsp paprika
Salt and freshly ground black pepper
1 (10 oz) can tomatoes with green chiles
1 cup canned black beans, drained and rinsed
1 cup frozen corn
3 Tbsp fresh cilantro
1 Tbsp fresh lime juice
2/3 cup shredded monterey jack cheese
