Chicken Strawberry Spinach Salad

When it’s hot outside, who wants to be stuck in a hot kitchen cooking food, thus making it even hotter? Not me, that’s for sure, so I’m always looking for meals that are easy to prep for hot summer days but are still healthy and somewhat guilt-free. And since strawberries are still abundant, this is a great way to put them to use and they complement the chicken so well. The zesty ginger-lime dressing really makes this pop … no boring salad with this one!

2 tbsp. olive oil (1 tbsp. reserved for cooking)
3 skinless, boneless chicken breasts, cut into bite-sized chunks
1/2 tsp. garlic salt
2 tbsp. light mayonnaise
3 limes, juiced (1 tbsp. reserved for marinade)
1 tsp. ground ginger
1 tsp. black pepper (1/2 tsp. reserved for dressing)
2 tbsp. milk
2 c. spinach, stems removed
2 c. fresh strawberries, cleaned and sliced
