Chicken Tamale Pie

This is an awesome alternative to your classic Mexican dishes.

1/3 cup fat free milk
1 egg
2 tbsp. taco seasoning
1 can of cream corn
1 box corn bread mix
6 oz enchilada sauce
2 cups cooked, shredded chicken
1 cup shredded Mexican blend cheese
Preheat oven to 400. Combine milk, egg, 1 tbsp. taco seasoning, cream corn and corn bread mix in a large bowl. Spray a deep dish pie plate with cooking spray and pour the corn bread mixture in the pie plate. Bake for 20 minutes. Meanwhile, toss chicken with remaining taco seasoning. When corn bread mixture is done, (it should be just barely set) poke the top all over with a fork. Pour the enchilada sauce over it, then the chicken. Top with cheese. Bake an additional 15 minutes or until cheese is melted and bubbly. Top with more sauce and sour cream if desired.
