Chocolate Chocolate Shortbread

Love shortbread? Love Chocolate? Then have I got a cookie for you! Chocolate shortbread covered in a rich, creamy layer of chocolate glaze, and topped off with chopped nuts – YUM! This recipe is easy and goes a long way. It’s a perfect addition to brunch, dinner, or holiday cookie trays {or most importantly a perfect late-night snack for you!}

Ingredients:

1/2 cup unsalted butter, softened
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1/4 teaspoon salt
1 large egg yolk
1/2 teaspoon vanilla
1 cup flour
1/2 cup coarsely chopped pecans or walnuts

Chocolate Glaze

3 ounces bittersweet or semi-sweet chocolate
2 tablespoons unsalted butter, cut into pieces

Supplies Needed:
