Chocolate Peanut Butter Tart

This tart not only has an amazing peanut butter cookie crust, but it is also filled with “to die for” peanut butter mousse and is topped with delicious chocolate ganache. Mercy!! I could eat the filling by itself.

For the crust:

1/2 cup all purpose flour
1/2 teaspoon baking soda
1/16 teaspoon salt
1/4 cup packed light brown sugar
2 tablespoons sugar
4 tablespoons unsalted butter at room temperature
1/2 cup creamy peanut butter at room temperature
1/2 large egg (beat before measuring)
1/4 teaspoon pure vanilla extract

For The Filling:

7 tablespoons cream cheese, softened
1/2 cup peanut butter, preferably Jif, at room temperature
1/4 cup confectioner’s sugar, sifted
1 teaspoon pure vanilla extract
3/4 liquid cup heavy cream, softly whipped

For the Chocolate Ganache Topping:

5 ounces semi-sweet chocolate
1/3 cup heavy cream
1/8 teaspoon pure vanilla extract
