1/2 pound Mexican chorizo
1 jalapeño, seeded and diced
1 tablespoon olive oil
20 ounces refrigerated shredded hash browns
black pepper
8 ounces sour cream
1 egg, lightly beaten
1 cup enchilada sauce
8 ounces shredded Mexican cheese blend
