CIDER BRAISED CABBAGE & APPLES

This is one of those things that people either hate or love. I happen to love it! A perfect balance between sour and sweet. Serve this alongside roasted pork, on a grilled sausage on a bun or even on a grilled cheese for a nice complimentary flavour.

1 whole cabbage (white or red, shredded)
2 tbsp butter
2 tbsp honey
4 slices bacon (lardons)
1 medium onion (finely sliced)
2 cups chicken stock
2 julienned apples (whatever you have, but they should be sweet, not tart)
1 tbsp caraway seeds
½ cup white wine vinegar
160z dry cider (tall boy can)
¼ cup sugar
salt and pepper to taste
