We serve this delicious and spicy chicken shredded and over rice.

3 - chicken breast halves
2 - 14.5 oz. cans of petite diced tomatoes with green chilies
2 T. lime juice (EQUIVALENT of juice of one lime)
1/4 c. fresh Cilantro, chopped
1 pkg. taco seasoning
2 cups Minute Rice
2 cups water

Place all ingredients (except rice and water) in crock-pot. Cook on low 6 hours. Near end of cooking time, remove chicken breasts and shred. Return chicken to crockpot, and prepare rice. Serve shredded...
