Cinnamon Apple Protein Pancakes

Hearty pancakes for breakfast or as a snack that will fill you up and keep you going. My family loves to eat these on hot summer mornings with a big dollop of cool plain yogurt and fresh berries. They are also great with peanut butter and maple syrup!

1/2 cup whole wheat flour
1/2 cup oats (uncooked oatmeal)
1/3 cup protein powder
1/2 cup applesauce
1/2 cup yogurt (for more protein use Greek yogurt)
1 cup milk
1 egg
1 tbs olive oil
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
1/2 cup oats (uncooked oatmeal)
1/3 cup protein powder
1/2 cup applesauce
1/2 cup yogurt (for more protein use Greek yogurt)
1 cup milk
1 egg
1 tbs olive oil
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
First heat up your griddle. While it is heating, mix the dry ingredients together. Then add in the wet ingredients. Mix gently. Finally, make some pancakes! Pour or spoon about 1/3 cup batter onto medium hot griddle and cook on fist side until bubbles are formed. Flip and cook at least another minute. Serve with butter and syrup, peanut butter, yogurt and fruit, or your favorite topping.
If your batter is too thick, add more milk. If your applesauce is not sweetened, or if your protein powder is unflavored, you may want to add one tablespoon of honey, sugar or your favorite sweetener. These pancakes store nicely in the freezer and you can just put them in the toaster for a quick breakfast later.
