Cinnamon Chip Toffee Oatmeal Cookies

Crispy on the edges and chewy in the middle, these oatmeal cookies are yummy. The cinnamon chips and toffee make them extra special!

1 cup butter or margarine, softened
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
3 cups regular oats
1 cup cinnamon chips
1 cup toffee bits

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
