Classic hot cross buns

A classic Easter treat, hot cross buns are delicious fruity and spiced bread rolls. A perfect teatime snack toasted with a little butter.

1 cup/240ml milk
1lb/ 450g/3 cups flour - this can be all all-purpose/plain or as I used, use 1//3 enriched
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1 tsp allspice
3 1/2tbsp/ 50g butter
1 packet - 1/4oz/7g fast-acting/ highly active dried yeast
3tbsp/ 37g light brown sugar
finely grated zest of 1 small lemon
1 egg
1/2 cup/ 70g raisins
1/2cup/ 65g dried cranberries
cross: 4tbsp flour mixed with 2-3tbsp water
sugar syrup: 4tbsp sugar warmed in 4tbsp water until dissolved (optional)

Gently warm the milk without boiling, to slightly warm/tepid.
Mix together the flour, salt and spices then rub in the butter.
Add the yeast, sugar and lemon zest and mix through.
Beat the egg in to the milk...
