Classic Strawberry Shortcake

Strawberry shortcake is one of my all-time favorite things. I love this time of year too with all the fresh local strawberries available. I found a recipe I liked from Original Bisquick® mix, but modified it to suit my taste. A quick light dessert, that can be made in advance. Top it off perfectly with some homemade whipped cream.

For the cake:
2 c Bisquick
1/2 c milk
1/2 c butter
1/8 c sugar, plus 2t for sprinkling
dash of cinnamon
1t vanilla extract
For the Strawberries
2c sliced strawberries
2T sugar
1t chopped fresh mint
