perfect dessert for any season, a refreshing little cheesecake infused with citrus and ginger!

For Candied Citrus Fruit Slices:

(I used)
1 large grapefruit
1 large orange
2 clementines

2 cups coconut sugar
1 cup water

For the crust:
1 cup crumbled Chestnut shortbread cookies
2 tablespoons softened unsalted butter
1 tablespoon coconut oil
1 tablespoon coconut sugar
1 tablespoon squeezed citrus juice

2 part instructions for the filling:

1st bowl ingredients:

2- 8oz packages of cream cheese (I used a local product, Nancy's organic cultured cream cheese)
2 eggs
1 tsp vanilla
1/3 cup chestnut flour
1/2 coconut sugar

1/3 cup sour cream
1/2 cup coconut milk
3 tablespoons of squeezed citrus juices (from the ends of the sliced and candied pieces)

2nd bowl ingredients:

3 egg whites
1/4 cup coconut sugar
