Overnight french toast made with coconut milk and chunks of pineapple.

3 Tbs unsalted butter
3 Tbs light corn syrup
13.5 ounce can light coconut milk
3 large eggs
1 tsp vanilla extract
¼ tsp salt
8 slices French bread (about 1½ inch thick)
8 ounce can diced pineapple, undrained
½ cup sweetened flaked coconut
3 Tbs unsalted butter
3 Tbs light corn syrup
13.5 ounce can light coconut milk
3 large eggs

¼ tsp salt
