Colorful Grilled Seafood Salad with Wild Rice

This easy to make, healthy seafood salad is a little bit gourmet. Light, vibrant and full of color and crunch.

1&1/2 cups chicken stock or fish stock
1/2 cup wild rice
1/2 lb fresh shrimp (prawns) raw, peeled and cleaned
1/2 lb calamari raw, sliced and cleaned
5 ozs snow peas or sugar snap peas
1/2 tsp sesame oil
4 ozs baby spinach
1/2 onions, salad (red) sliced thinly
1 bell pepper (capsicum), red sliced
1 avocado sliced thinly

Dressing
1/3 cup olive oil
2 tbsp lemon juice
1 clove garlic crushed
